A tribute to Pâtisserie Française: the Tarte Tatin

It all stems from a mistake

Tarte Tatin is a very famous French dessert that originated from a simple mistake. In fact, tradition tells how it all happened in the late 19th century in the restaurant of the Hôtel du Pin d'Or run by sisters Stephanie and Caroline Tatin in Lamotte-Beuvron, France.

One Sunday morning Stephanie, preparing an apple pie in a great hurry, after buttering and sprinkling the cake pan with sugar, forgot to put on the layer of brisé pastry and arranged the apples directly, which became caramelized with sugar and butter during baking. When he realized his mistake, he added the pastry on top of the apples and, at the end of baking, obtained an upside-down cake, which he then inverted onto a plate.
The customers who tasted it were immediately satisfied with it, and so the two sisters began to make it regularly. Because of this it took their name and began to be called Tarte Tatin.
